You are the school nurse at a local university health clinic. A 35-year old Hispanic nursing student comes to the clinic complaining of a 20 pound weigh gain since starting nursing school 2 semester ago. She has a full time class schedule including labs and clinical, and then works each evening at a local fast food restaurant. She has 3 school age children and is a single parent. She has been in this country for 10 years after immigrating from Mexico. She is concerned about her weight gain and also states that she has no energy, and is having difficulty getting sufficient hours of sleep each night. Despite this she tries to prepare meals each day for the children which reflect her Hispanic heritage.

In relation to this student, identify at least one actual and one potential health risk and provide evidence-based interventions to address the risks. Please use Healthy People 2020 as one of your resources in addition to a peer reviewed journal article
